zanahorias al limón / carrots with lime

Is it just me, or does “zanahoria” look and sound cooler than “carrot?”  Ah, the advantages of living in a house where two languages are spoken! Chef up some cooked carrots, throw some melted butter and lime juice on them, along with salt, pepper and cilantro for garnish and voilà, impressive zanahorias as opposed to boring old carrots. These are embarassingly simple, yet scrumptious, fairly healthy and budget friendly. ¡Buen Provecho!

Zanahorias al limón / Carrots with lime adapted (and translated) from Mundorecetas

Printer-Friendly Recipe


6 large carrots – washed, peeled, cut into bite sized pieces and steamed or boiled until soft

2 limes

2 Tablespoons melted butter

1/4 cup finely chopped cilantro

salt and pepper, to taste


1. Prepare carrots by steaming or boiling

2. Toss with lime juice, butter, salt and pepper

3. Top with chopped cilantro

4. Serve immediately

    I have to agree with you; Zanahorias sounds more impressive. 😀 Thanks for the interesting twist. I’ve never put lime on carrots before!
