spinach salad with mango, walnut crusted goat cheese and red onion

Oh, salad heaven! I had a salad very similar to this at a restaurant called City Kitchen when we were celebrating Elias’s birthday. I took a stab at recreating it (with a few additions and deletions) and I was super happy with my version. So tasty! So impressive looking! This would be a great salad to serve at a dinner party or add some crusty bread and make it a lunch!

Mrs. Smith’s Spinach,Mango & Goat Cheese Salad (serves 4-6)

Ingredients:

1 bag baby spinach

2 mangos, diced

1/2 red onion, thinly sliced

1 5 oz package goat cheese

1/4 cup crushed walnuts (I used lightly candied walnuts)

Procedure: Cut the goat cheese in to 4-6 portions. With clean hands, roll the balls of goat cheese in the crushed walnuts. Plate each salad with a ball of goat cheese and a bed of baby spinach. Top with diced mango and sliced red onion. Dress with any vinaigrette. I used a modified version of this dressing.

Dressing:

Juice of one lime, 5T olive oil, 1 jalapeño pepper (seeds removed) minced, 1/4 c. cilantro leaves, chopped, salt and pepper to taste. Whisk ingredients together, chill, and dress salad. (Dressing gets better if left to sit few hours in the refrigerator)

Notes: Salads are so flexible, you could add your own twist to this salad, and I’d love to hear your ideas in the comments.
